The recipe for Indian sandwich bread topped with potatoes and cheese (Aloo Paratha) is vegetarian and particularly popular in northern India.

In the Indian language, dishes are often named after their main ingredients. Aloo means, for example, potato and Paratha refers to Indian flatbread. Aloo Gobi, on the other hand, is an Indian main dish made with potatoes and cauliflower (mouthI). Aloo Paratha is often served in North India for breakfast, as a quick snack and also during celebrations such as the Holi festival.

You need these ingredients for the Aloo Paratha:

  • dip:
  • 100 grams of sour cream
  • 15g chopped chives
  • 10 g chopped coriander
  • 1 teaspoon of salt
  • 0.5 tsp pepper
  • Filling:
  • 15ml cooking oil
  • 100g diced onions
  • 1 clove garlic, minced
  • 0.5 tsp pepper
  • 1 teaspoon of salt
  • 400g potatoes, boiled and halved
  • 100 g grated Emmental cheese
  • 1 teaspoon of cumin
  • 10 g coriander leaves
  • Other than that:
  • 1 roll (400g) pizza dough
  • Flour
  • 200ml cooking oil

The preparation is so simple:

  1. For the dip: Whisk together sour cream, chives, cilantro, salt and pepper in a small bowl.
  2. For the filling: Sauté the onions and garlic in a skillet with cooking oil and season with salt and pepper. Let cool slightly. Mash boiled potatoes in a large bowl. Then add the Emmental, cumin, sautéed onions and coriander and mix well.
  3. Cut the pizza dough into 6 equal rectangles and place them on a lightly floured surface. Cover each piece of pizza dough with two to three tablespoons of topping. Then fold the dough over the filling and press the edges well. Then gently roll into round flatbreads using a rolling pin.
  4. Fry flatbreads in hot cooking oil in a skillet for three minutes on each side.
  5. Tear, dip, enjoy. Enjoy your food!

Advice: In India, in addition to the version with yogurt dip, aloo paratha is often served with ghee butter, an essential ingredient in Asian cuisine. It is even supposed to improve your health.
